MARCELLO BARUZZI

Our talented chef Marcello Baruzzi has enjoyed a long career in prestigious restaurants, including the Michelin-starred "La Frasca", and in 5-star hotels like the Grand Hotel in Rimini. His demanding and successful career has led him to JSH and the kitchens of Living Place Hotel. He describes his experience at JSH in these words: “There has always been a very friendly feeling, which creates immediate harmony with all the other chefs; it’s like a big family.” His aim for this year? “Definitely to build a team and seek to share as much as possible, including with my staff, maintaining the great energy shown during the conference for JSH chefs at Galzignano.”

THE CHEF

FISH FRICCANDÒ STEW ROMAGNA STYLE
Ingredients:

½ kg cleaned fish (red mullet – monkfish – rockfish, etc.) – 1 garlic clove – extra virgin olive oil – salt.
For the friccandò: 8 whole shallots – 2 aubergines – 4 courgettes – 2 potatoes – 4 ripe tomatoes – 1 bunch basil – 1 glass dry white wine – salt and pepper.

Method:
Wash and dice the vegetables. Add salt. Put the oil and shallots in a pan. Cover them with the wine. Add the chopped tomatoes and cook for about ten minutes. Add the other vegetables. Adjust the seasoning and complete the cooking. Put the fish in a frying pan with a bit of oil and the garlic. Add salt and cook them for a few minutes. Serve the fish with the friccandò and decorate the plates with the chopped basil.
